a . Registration for the Real Food Festival is now open…
Save £25* by pre-registering. - Monday 10th May sees the Real Food Festival open its doors to visitors in a day dedicated to trade only, to discover what’s new from some of the finest food and drink producers in the UK. What’s better, this year for the first time, trade visitors who pre-register for their ticket will get free access, rather than paying £25 fee on Monday.
The Real Food Festival is the event that offers buyers from all sectors of the food & drink industry the very best. From food service to retail, public institution caterers to wine merchants, come and discover the best ingredients available in the UK and meet the people who produce them. The Real Food Festival provides subsided stands for smaller producers, with up to 400 producers attending, many not to be found at any other food events this year.
Whilst the dedicated trade day is Monday 10th May, trade visitors will also be able to register for free entry on Sunday, when the show will also be open to consumers (usual ticket price £15).
Everyone from retail buyers to public service caterers will find plenty to inspire them on the exclusive trade day at the Real Food Festival, Monday 10th May 2010:

The British Frozen Food Federation is sponsoring the first ever class to use frozen food ingredients in a competition at the world renowned Le Salon Culinaire International de Londres.
BFFF’s ‘Fish Dish Challenge’ will form part of Salon Culinaire’s schedule of competitions, to be held in front of a live audience at the Hotelympia show..
Open to all levels of chefs from all culinary backgrounds, contestants will have 30 minutes to prepare, cook and present two portions of a fish dish using the highest quality tuna steaks supplied by BFFF. Friends of the Sea accredited, the tuna is sourced from sustainable stocks in the Pacific Ocean, is pole and line caught, then frozen at the peak of its quality.
Judges will include renowned industry chefs who will award marks for working methods, culinary skills, presentation, portion size, taste, textures, flavours, timing and temperature.
Brian Young, Director General of BFFF said: “Our Fish Dish Challenge is a sign of changing culinary attitudes. There has long been a perception that frozen is inferior to fresh. But now that the facts are coming to light, the benefits of frozen are clear.
“This class will challenge frozen food stereotypes and bust the myth that ‘fresh’ is best. We hope that chefs entering the competition will enjoy using the product – and wish them the very best during the competition.”

3 . BBC top chef to cook at Hotel and Catering Show Dinner

Masterchef winner Steve Groves has revealed that he will be cooking at the prestigious Hotel and Catering Show Dinner on Tuesday 16th March 2010, which will take place at the Bournemouth Highcliff Marriott Hotel.
Steve, former head chef at Dorset-based Branksome Beach restaurant and current Sous Chef at the exclusive London restaurant Launceston Place, was crowned champion of the popular BBC2 Masterchef: The Professionals show by judges Michelin-starred chef Michel Roux Jr and Gregg Wallace.
Joining forces with the executive chef at the Bournemouth Highcliff Marriott, Clyde Hollett, and current head chef at Branksome Beach, Lionel Sene, Steve will work with Clyde and Lionel to design a four-course menu. Guests will also be able to enjoy fine wines courtesy of Matthew Clark.

2010 Wessex Salon Culinaire set to stage WorldSkills UK hospitality competitions
The quest to find the UK’s best chefs is underway with entries now open for the 2010 Wessex Salon Culinaire. Ambitious chefs and restaurant service professionals in employment, training or education have until 9 March 2010 to enter online at www.hotel–expo.co.uk/wsc if they wish to take part.
The Wessex Salon Culinaire will be staged at the Hotel and Catering Show in Bournemouth on 16 and 17 March 2010 and for the first time in the competitions six year history it will include the WorldSkills UK Cooking, Confectioner/Pastry Chef and Restaurant Services competitions.
Those wishing to enter the WorldSkills UK Cooking, Confectioner/Pastry Chef and Restaurant Services competitions will be required to compete in three out of five classes in the relevant disciplines. Winners from these three prestigious competitions may be selected to represent the UK at the 2011 WorldSkills Competition, the largest skills event in the world, which will be held in London. -
