A great potato salad

Ingredients:
Serves 12
2 kg Vale’s Fresh Diced Potatoes
1 vegetable bouillon cube, 1 tbs stock powder, or stock base
4 sticks celery
8 large spring onions
2 large dill pickle, chopped
6 free range eggs hard boiled and peeled
1 tub cress or a bunch of watercress roughly chopped
Sea salt and freshly ground black pepper
Dressing
250ml vinaigrette dressing
1 tbs French mustard
150g real mayonnaise
Method:
1 Cook the potatoes, just covered with a light stock made with the bouillon cube, powder or stock base and boiling water. When just tender drain and tip the potatoes into a large shallow bowl, season and leave to cool.
2 Slice the celery and onions thinly. When the potatoes are at room temperature mix in the celery, onion and dill pickle.
3 Beat together the vinaigrette, mustard and mayo until creamy then toss into the potato. Check the seasoning again and tip into a serving dish.
4 Halve or quarter the eggs and arrange on top then garnish with the cress. Serve lightly chilled and do not store for more than 8 hours.
