Indian cooks have great ways with potatoes. This tasty classic is perfect to serve with al fresco meals and barbecue foods of all sorts.
Ingredients:
Serves 12
2 kg Vale’s Fresh Diced Potatoes
Vegetable oil, for frying
2 red onions, sliced thinly
4 fat cloves garlic, crushed or chopped
2 – 3 large fresh red chillies, slit deseeded and sliced thinly
1 tablespoon ground turmeric
3 tablespoons mustard seeds or poppy seeds
a fistful of roughly chopped coriander leaves
Sea salt and freshly ground back pepper
Method

Heat a large frying pan and add 2-3 tbsp oil then stir fry the onion, garlic and chilli for about 3 minutes until just softened.

Mix in the turmeric and cook 1 minute. Stir in the mustard or poppy seeds and cook 1 more minute until the seeds start to pop.

Add more oil and then toss in the potatoes and cook for a further 10 minutes or until piping hot. Season, mix in the coriander and serve hot or warm.
