Waste management – making a difference
“Massive use – they make a huge difference” the comment made by Carol Dean, Business Development Manager, of the Swan brasserie at West Malling in Kent and of the Swan at the Globe Theatre at Bankside in Southwark.
This comment was made in relation to Bottle Crushers and RMV Container Presses supplied to the Swan businesses by environmental and recycling specialist, Jarshire Limited. Kitchen staff at both venues found the equipment easy to use leading to a tidier, safer and more efficient operation.
With an average of 600 covers per week, the bottle crusher at the Michelin-listed Swan brasserie reduces volume by some 95% producing non-sharp cullets for recycling whereas previously the bottles were simply sent to landfill. The crusher is available in two versions capable of handling from 1000 to 4000 bottles per day. Safe in operation the cullets are collected in re-usable plastic bags for disposal.
At the Globe, where Swan is the caterer, in addition to regulars, 1500 people visit the theatre twice a day producing a huge amount of waste. Fully galvanised, the RMV Container Press is completely waterproof and can be left outside in any weather condition. Waste volume is reduced to just a quarter of its original size. Together, the two pieces of Jarshire equipment have reduced the number of refuse collections by half.
